Translucent pale straw colour. Aromas reveal pear-drops, liquorice and fresh hay at summer’s end. Clear and mineral, its restrained acidity bringing the palate to a pensive, lingering end. Serve at 10 – 12ºC.
Delicious on its own or with simple flavours: grilled shrimp, crunchy asparagus, gnocchi with butter and sage, Moroccan couscous.
On three locations, located more at the valley bottom and facing east or west for slightly less sun exposure to enhance the delicate freshness.
Winemaking & Ageing:
Selected, handpicked grapes reach the winery in boxes of 20 kg. Smooth pressing of whole bunches by pneumatic press to extract the best must, which is left to settle for one day at 7ºC to decant. Fermented in steel vats at low temperatures (11 - 13ºC).

This wine lives on its subtlety. It is remarkably transparent, even slight changes in fermentation temperature result in very different wines. Each year it develops a little further, both in the vineyard and winery.
